Term Definition
Bake

Cooking process using the dry heat of an oven. Food may be covered or uncovered. For your reference, cooking with cannabis requires that the temperature stay below 375 degrees Fahrenheit. THC Vaporizes at temperatures not much higher than this, so it's a safety precaution so as not to waste your cannabis.

Baste

To moisten foods during cooking or grilling with drippings(fats) or seasoned liquids to add flavor. Also prevents drying of meats during baking.

Batter

A wet mixture that can be spooned or poured, such as with cakes or muffins. Also used to coat foods for frying.

Beat

Briskly whipping a mixture until smooth. Usually a whisk, fork, beater or mixer is used.

Blanch

The process of partially cooking fruits, veggies or nuts to enhance color and flavor. Essential for freezing veggies. It also helps to loosen skins from tomatoes for sauces.

Blend

Combining two mixtures with an electric mixer or blender until a uniform consistency and flavor is achieved.

Boil

Cooking foods in liquids which have bubbles forming and rising in a steady pattern, breaking the surface. A rolling boil occurs when the bubbles cannot be stirred down.

Braise

Cooking food in a tightly covered pan in a small amount of liquid. Recommended for tough meats.

Breading

A coating of crumbs, sometimes seasoned, on meat, fish, poultry or veggies. Bread crumbs, cracker crumbs, corn flakes, and flour are all used in different types of breading.

Crush

To smash food into smaller pieces, usually with your hands or a hard object. Crushing herbs will release more of their flavor and smell.

Cube

To cut food into uniform size, approximately ½ inch on each side.

Dash

A small amount of a seasoning, usually between 1/8th to 1/16th of a teaspoon.

Deglaze

Addition of a liquid to a pan that has been used to cook meat. Be sure and scrape up all the 'good bits' with a wooden spoon as you deglaze!

Dice

To cut food into uniform size, approximately 1/4th to 1/8th inch on each side.

Dredge

To coat food with a dry ingredient, like flour, sugar, or cornmeal, before or after cooking. Not to be confused with dredg, the American progressive/alternative band from Los Gatos, California.
